The bread knife is long and strong blade, with serrated edges that cut through bread effortlessly.
The knives of classic series are designed using straight lines and sharp contrasts. Knives forged from one piece Nitrum® stainless steel for greater stability and sharpness to satisfy even the most demanding chefs.
Classically styled handles beautifully finished ensuring strength and design. The elegant ergonomic handle offers a modern contemporary design along with durability and comfort. The handle scales are made of polyoxymethylene (POM) and is highly resistant to impact, abrasion, and solvents and is able to withstand high and low temperatures between -40ºC to 150ºC. Rivets are made of stainless steel alloy ensuring extremely high corrosion resistance.
This product is warranted against defects in material and workmanship for a period of TEN YEARS.

NITRUM® STAINLESS STEEL:
NITRUM® is a nitrogen enriched, eco-friendly stainless steel formula, available exclusively on Arcos knives. This formula achieves a improved hardness, enhanced cutting power and improved edge durability. The microstructure, NITRUM® can make the difference in the performance of knives for professional users.
Improved Hardness: NITRUM® exceeds the ISO 8442-1 norm by more than 3 HRc. Enhanced Initial Cutting Power: NITRUM® tested 70% higher than the ISO 8442-5 norm. Edge Durability: NITRUM® tested 200% higher than the ISO 8442-5 norm.
STAINLESS STEEL RIVETS:
Arcos uses stainless steel rivets, instead of aluminium rivets, as usual with other manufacturers. These new rivets, apart from improving the assembly of handles thanks to a major subjection strength, increase extraordinarily their resistance to corrosion, guaranteeing that handles never come loosen from the knives due to this reason.
PROCESS OF FORGE:
The process of forge consists of the deformation of the steel, which previously has been warmed to red-hot, between two tools called “prints of forge “, which have engraved the shape of the knife to be achieved. To obtain the above mentioned deformation, presses of great tonnage are used, since a strong blow is necessary to achieve that the plastic flow of the steel begins to be deformed and then becoming the form engraved in the prints.
It is necessary in this process to distinguish that the resultant knife is a solid single piece, avoiding the unwanted welded, stuck and empty areas, which are synonymous of knives of low quality, because they are areas of low mechanical resistance, were breaks could be produced as well as potential points of oxidation.
PROCESS OF TEMPER:
The temper is the most important phase in the manufacturing process of a cutting tool. It consists of a thermal treatment of steel to a high temperature (around 1070ºC), keeping it during a certain time (time of austenization) and then, carrying out a quick cooling up to room temperature, obtaining this way the transformation of the molecular structure of the steel (martensitic reaction), which becomes evident with an increase of the hardness of the steel. Hardness is the physical necessary quality to obtain a good power and cut durability from a knife. In addition, the right internal structure of the steel grants a major resistance to corrosion.
Arcos carries out the thermal treatment of temper in constant furnaces with controlled atmosphere and, later, carries out a second thermal treatment – so- called tempering - that consists of a warming to 250ºC, in order to eliminate any tension made by the rapid cooling of the temper that could produce fragility in the steel, granting the same mechanical properties along the whole edge of the tool.
